If you are going to edit some characters you might want to use windowed mode. In your Guild 2 Renaissance install folder find userconfig.ini and change ReFullScreen = 1.000000 to ReFullScreen = 0.000000 for windowed mode.

Ok, so the npc editor you have to select an npc and right click to bring up their stats/info and quickly alt-tab out so it sticks- then you can edit them. Once you edit your character/NPCS it SHOULD be permanent for most things.
And the option: Massive Storage & Sale Stock capacity for OCCUPIED slots will set the capacity massive to whatever slots you have occupied in your BUSINESS. So some object/goods have to be in the slot for it to work. It is a SHARED address but is slow to update to others: so activate, open your business inventory then quickly deactivate. That way you are not giving the npcs massive inventory space
